For the pancakes: 2½ cups Maida; 1½tsp baking powder; 1tsp baking soda; pinch of salt; 4tsp powdered sugar; 500ml milk; 2 eggs; 3-4 tsp butter.
For the filling: 4 ripe pears or apples, peeled, cored and thickly sliced, or 3-4 oranges; 2tsp brown sugar or caster sugar; ½ cup butter.
1. Whisk all ingredients of the pancake (except butter). Heat some butter in a pan on low flame. Spoon 2tsp of batter, spreading it thin (so they can be easily folded later). Flip over when one side is cooked; cook the other side.
2. Now heat ½ cup butter, add pears, apples or oranges. Sauté 1-2 minutes until one side is golden. Turnover and sprinkle with sugar and cook for 2-3 minutes or until pan juices are sticky.
3. Warm pancakes in the microwave. On each pancake, put filling on one quarter. Fold pancake in half and then in quarter. Drizzle juices over.
